Ingredients:
2 eggs
1 1/2 cups of soft white wheat bran
1 cup of blueberries
1/2 cup of sugar
1/2 cup of vegetable oil
1/2 cup of flour
1/2 cup of cranberries (optional)
Preheat oven to 190 degrees C (375 degrees F). Mix the sugar and oil together in a bowl with a whisk. Add two eggs, one at a time after stirring the sugar and oil. Fold in the flour and wheat bran; mix well. Add the blueberries – and, if desired, cranberries – and mix carefully. Transfer to a buttered and floured bread pan. Bake in the oven for 35 to 40 minutes. Let the cake cool in the pan for 10 minutes before unmoulding.
